When you have your own tea garden, you can make a huge range of teas and infusions with only a few easy-to-grow plants. Many can be used either fresh or dried, and it’s fun and fulfilling to experiment with the flavors and the properties to make your own blends.

Storing Your Dried Herbs

Now that you’ve grown, harvested, and dried your garden allies, it’s time to store them. Once completely dry, you can now process the plants and put them into storage jars. Carefully remove the stems and the parts of the plants that you do not want to store and delicately place the whole leaves into glass Mason jars or other storage jars. Leaving the leaves whole keeps the cell walls intact and reduces the evaporation of essential oils. Just before brewing, you can crumble the leaf to help it infuse fully into your cup. Ideally, these jars should be stored out of the light and sealed tightly.
