Prosciutto & Goat Cheese Tea Sandwiches with Citrus Marmalade

Tangy goat cheese and a sumptuous lemon-orange marmalade combine in this unique tea sandwich whose flavor will brighten a dreary winter day. Pictured with our Grapefruit–Chicken Salad Puff-Pastry Bites and Lemon, Ricotta & Shrimp Crostini.

Prosciutto & Goat Cheese Tea Sandwiches with Citrus Marmalade
 
Makes 24
Ingredients
  • 1 (4-ounce) package goat cheese
  • 2 ounces cream cheese
  • 12 slices thin white bread
  • 3 ounces prosciutto
  • 9 tablespoons Citrus Marmalade (recipe follows)
Instructions
  1. In a medium bowl, stir together goat cheese and cream cheese until well combined.
  2. Spread approximately 2 tablespoons cheese mixture onto 6 bread slices, leaving a ½-inch border. Top each with 1 prosciutto slice. Spread 1½ tablespoons Citrus Marmalade on each of remaining 6 bread slices, and place on top of prosciutto, marmalade side down, to make 6 whole sandwiches. Freeze sandwiches for 10 to 15 minutes.
  3. Using a serrated bread knife in a gentle sawing motion, trim and discard crusts from sandwiches. Cut each sandwich diagonally into 4 equal triangles. Serve immediately, or cover with damp paper towels, place in a covered container, and refrigerate for a few hours until serving time.

Citrus Marmalade
 
Makes approximately 1¾ cups
Ingredients
  • 2 small Valencia oranges
  • 1 cup granulated sugar
  • 1 cup water
  • 3 tablespoons fresh lemon juice
Instructions
  1. Wash oranges well. Thinly slice oranges and finely chop.
  2. In a small saucepan, stir together oranges, sugar, 1 cup water, and lemon juice. Bring to a boil over medium heat; reduce heat to low and simmer, stirring often, until mixture has reduced and thickens to a jam consistency, 45 minutes to 1 hour.
  3. Remove from heat, and let cool completely. Transfer to a covered container, and refrigerate for at least 6 hours. Use within 2 weeks.
