Prosciutto & Goat Cheese Tea Sandwiches with Citrus Marmalade
Makes 24
Ingredients
- 1 (4-ounce) package goat cheese
- 2 ounces cream cheese
- 12 slices thin white bread
- 3 ounces prosciutto
- 9 tablespoons Citrus Marmalade (recipe follows)
Instructions
- In a medium bowl, stir together goat cheese and cream cheese until well combined.
- Spread approximately 2 tablespoons cheese mixture onto 6 bread slices, leaving a ½-inch border. Top each with 1 prosciutto slice. Spread 1½ tablespoons Citrus Marmalade on each of remaining 6 bread slices, and place on top of prosciutto, marmalade side down, to make 6 whole sandwiches. Freeze sandwiches for 10 to 15 minutes.
- Using a serrated bread knife in a gentle sawing motion, trim and discard crusts from sandwiches. Cut each sandwich diagonally into 4 equal triangles. Serve immediately, or cover with damp paper towels, place in a covered container, and refrigerate for a few hours until serving time.
Citrus Marmalade
Makes approximately 1¾ cups
Ingredients
- 2 small Valencia oranges
- 1 cup granulated sugar
- 1 cup water
- 3 tablespoons fresh lemon juice
Instructions
- Wash oranges well. Thinly slice oranges and finely chop.
- In a small saucepan, stir together oranges, sugar, 1 cup water, and lemon juice. Bring to a boil over medium heat; reduce heat to low and simmer, stirring often, until mixture has reduced and thickens to a jam consistency, 45 minutes to 1 hour.
- Remove from heat, and let cool completely. Transfer to a covered container, and refrigerate for at least 6 hours. Use within 2 weeks.
