Turkey, Brie & Apple Tea Sandwiches

Ingredients
- 1 Granny Smith apple
- 1⁄4 cup mayonnaise
- 2 tablespoons whole-grain mustard
- 1⁄2 teaspoon fine sea salt
- 1⁄8 teaspoon ground black pepper
- 12 thin slices whole wheat bread, frozen
- 1⁄3 cup fresh spring mix lettuces
- 1⁄4 pound thinly sliced deli smoked turkey breast
- 4 ounces Brie cheese, thinly sliced
Instructions
- Using a sharp knife, cut apple into quarters, discarding core. Using the second setting on a mandoline, cut 24 slices from apple. Discard seeds.
- In a small bowl, whisk together mayonnaise, mustard, salt, and pepper until well combined.
- Using a 2 1⁄2-inch square cutter, cut 12 squares from frozen bread slices, discarding scraps. Spread 1 tablespoon mayonnaise mixture onto each frozen bread slice. Arrange a layer of lettuces on mayonnaise side of 6 bread slices. Stagger 4 apple slices on top of lettuces. Shingle turkey and cheese on top of apples, trimming as needed to fit. Top each with a remaining bread slice, mayonnaise side down, to make 6 sandwiches.
- Cut each sandwich in half to make 2 rectangles. Serve immediately, or cover with damp paper towels, place in an airtight container, refrigerate, and serve within 30 minutes.
Notes
Kitchen Tip: If preparing tea sandwiches more than 30 minutes in advance, dip apple slices in lemon water to prevent browning. Lightly pat dry with paper towels before using.
