Turkey-Bacon Roll-Ups

Cranberry-Brie Puffs, Whipped Pumpkin Feta Crostini, and Turkey-Bacon Roll-Ups

Whole-wheat tortilla roll-ups—filled with a sun-dried tomato spread, spinach, turkey, and bacon—are simple to make and produce a tasty bite for a Friendsgiving tea. Pictured with our Cranberry-Brie Puffs and Whipped Pumpkin Feta Crostini.

Turkey-Bacon Roll-Ups

Ingredients
  • 2 ounces cream cheese, room temperature
  • 2 tablespoons minced sun-dried tomatoes
  • 2 tablespoons mayonnaise
  • 1 tablespoon sliced green onion
  • ⅛ teaspoon chili powder
  • 3 large whole-wheat tortillas
  • ¾ cup baby arugula
  • ¾ cup baby spinach
  • 6 slices deli turkey
  • 3 slices bacon, cooked and crumbled
Instructions
  1. In a medium bowl, stir together cream cheese, tomatoes, mayonnaise, onion, and chili powder until smooth. Evenly spread mixture onto tortillas, leaving a ½-inch border. Top evenly with layers of arugula, spinach, turkey, and bacon. Roll up each tortilla into a cylinder, and wrap tightly with plastic wrap. Refrigerate for 4 hours or up to a day.
  2. Just before serving, carefully unwrap tortilla cylinders, and place seam side down on a cutting surface. Using a serrated bread knife in a gentle sawing motion, trim and discard 1 inch from each end. Cut cylinders crosswise into 6 (¾- to 1-inch-thick) slices. Serve immediately.
