Turkey-Bacon Roll-Ups
- 2 ounces cream cheese, room temperature
- 2 tablespoons minced sun-dried tomatoes
- 2 tablespoons mayonnaise
- 1 tablespoon sliced green onion
- ⅛ teaspoon chili powder
- 3 large whole-wheat tortillas
- ¾ cup baby arugula
- ¾ cup baby spinach
- 6 slices deli turkey
- 3 slices bacon, cooked and crumbled
- In a medium bowl, stir together cream cheese, tomatoes, mayonnaise, onion, and chili powder until smooth. Evenly spread mixture onto tortillas, leaving a ½-inch border. Top evenly with layers of arugula, spinach, turkey, and bacon. Roll up each tortilla into a cylinder, and wrap tightly with plastic wrap. Refrigerate for 4 hours or up to a day.
- Just before serving, carefully unwrap tortilla cylinders, and place seam side down on a cutting surface. Using a serrated bread knife in a gentle sawing motion, trim and discard 1 inch from each end. Cut cylinders crosswise into 6 (¾- to 1-inch-thick) slices. Serve immediately.
