Sunflower Butter Cookies

Cinnamon and apple pie spice bring fall flavor to the lovely layers of apples and homemade granola in this healthy vegan treat. Pictured with our Sunflower Butter Cookies

Spiced Apple Parfaits
Serves: Approximately 8
 
Ingredients
  • 2 cups ¼-inch diced Gala apple (approximately 1 ½ apples)
  • ½ cup granulated sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon apple pie spice
  • ⅛ teaspoon fine sea salt
  • ⅔ cup cashew yogurt
  • 1 cup Sunflower Granola (recipe follows)
Instructions
  1. Preheat oven to 400°. Line a rimmed baking sheet with foil.
  2. In a bowl, stir together apples, sugar, cinnamon, apple pie spice, and salt. Transfer mixture to prepared baking sheet.
  3. Bake until apples are tender, approximately 12 minutes. Let cool completely on pan.
  4. In individual trifle dishes or glasses, layer cooled apples, cashew yogurt, and Sunflower Granola as desired. Serve immediately.

Sunflower Granola
Serves: Approximately 6 cups
 
Ingredients
  • 3 cups old-fashioned oats
  • 1 cup roasted unsalted sunflower seed kernels
  • ¼ cup toasted sliced almonds
  • ½ cup chopped pitted dates
  • ½ cup chopped dried sweetened pineapple
  • ⅓ cup firmly packed dark brown sugar
  • ⅓ cup maple syrup
  • ¼ cup vegetable oil
  • ½ teaspoon fine sea salt
  • ½ teaspoon apple pie spice
Instructions
  1. Preheat oven to 250°. Line a rimmed baking sheet with parchment paper.
  2. In a large bowl, stir together oats, sunflower seed kernels, almonds, dates, and pineapple.
  3. In a medium bowl, whisk together brown sugar, maple syrup, oil, salt, and apple pie spice. Pour over oat mixture, stirring to combine. Spread mixture in an even layer on prepared baking sheet.
  4. Bake for 45 minutes, stirring every 15 minutes. Let cool completely. Store in an airtight container for up to 2 weeks.
