Spiced Apple Parfaits
- 2 cups ¼-inch diced Gala apple (approximately 1 ½ apples)
- ½ cup granulated sugar
- ½ teaspoon ground cinnamon
- ¼ teaspoon apple pie spice
- ⅛ teaspoon fine sea salt
- ⅔ cup cashew yogurt
- 1 cup Sunflower Granola (recipe follows)
- Preheat oven to 400°. Line a rimmed baking sheet with foil.
- In a bowl, stir together apples, sugar, cinnamon, apple pie spice, and salt. Transfer mixture to prepared baking sheet.
- Bake until apples are tender, approximately 12 minutes. Let cool completely on pan.
- In individual trifle dishes or glasses, layer cooled apples, cashew yogurt, and Sunflower Granola as desired. Serve immediately.
