Red Velvet Swirl Brownies

Ingredients
- 1¼ cups granulated sugar, divided
- ½ cup unsalted butter, melted
- ⅓ cup natural unsweetened cocoa powder
- 1 tablespoon red food coloring
- 1¼ teaspoons vanilla extract
- ¼ teaspoon salt
- 1 teaspoon white distilled vinegar
- 3 large eggs, divided
- ¾ cup plus 1 tablespoon all-purpose flour, divided
- 1 (8-ounce) package cream cheese, softened
- 2 tablespoons heavy whipping cream
Instructions
- Preheat oven to 350°. Spray an 8-inch square baking pan with cooking spray. Line pan with a double layer of parchment paper, letting excess extend over sides of pan. Spray pan again.
- In a large bowl, beat together 1 cup sugar, melted butter, cocoa powder, food coloring, vanilla extract, and salt with a mixer at medium speed until well combined. Add vinegar, beating to combine. Add 2 eggs, beating well. Add ¾ cup flour, beating just until incorporated. Reserve ¼ cup batter for swirling. Spread remaining batter into prepared pan.
- In a medium bowl, beat together cream cheese, cream, remaining ¼ cup sugar, and remaining 1 tablespoon flour with a mixer at medium speed until well combined. Add remaining 1 egg, beating to combine.
- Carefully spread cream cheese mixture over chocolate batter. Drop small spoonfuls of reserved ¼ cup chocolate batter onto cream cheese layer. Drag the tip of a knife through chocolate batter to create swirls.
- Bake until brownie is set and slightly puffed, 25 to 30 minutes. Let cool completely in pan.
- Using excess parchment paper as handles, lift brownie from pan, and place on a cutting surface. Using a large knife, trim and discard crusts from brownie, and cut into 25 pieces.
- Store in a covered container, and refrigerate until serving time.
