Red Velvet Swirl Brownies

Ingredients
  • 1¼ cups granulated sugar, divided
  • ½ cup unsalted butter, melted
  • ⅓ cup natural unsweetened cocoa powder
  • 1 tablespoon red food coloring
  • 1¼ teaspoons vanilla extract
  • ¼ teaspoon salt
  • 1 teaspoon white distilled vinegar
  • 3 large eggs, divided
  • ¾ cup plus 1 tablespoon all-purpose flour, divided
  • 1 (8-ounce) package cream cheese, softened
  • 2 tablespoons heavy whipping cream
Instructions
  1. Preheat oven to 350°. Spray an 8-inch square baking pan with cooking spray. Line pan with a double layer of parchment paper, letting excess extend over sides of pan. Spray pan again.
  2. In a large bowl, beat together 1 cup sugar, melted butter, cocoa powder, food coloring, vanilla extract, and salt with a mixer at medium speed until well combined. Add vinegar, beating to combine. Add 2 eggs, beating well. Add ¾ cup flour, beating just until incorporated. Reserve ¼ cup batter for swirling. Spread remaining batter into prepared pan.
  3. In a medium bowl, beat together cream cheese, cream, remaining ¼ cup sugar, and remaining 1 tablespoon flour with a mixer at medium speed until well combined. Add remaining 1 egg, beating to combine.
  4. Carefully spread cream cheese mixture over chocolate batter. Drop small spoonfuls of reserved ¼ cup chocolate batter onto cream cheese layer. Drag the tip of a knife through chocolate batter to create swirls.
  5. Bake until brownie is set and slightly puffed, 25 to 30 minutes. Let cool completely in pan.
  6. Using excess parchment paper as handles, lift brownie from pan, and place on a cutting surface. Using a large knife, trim and discard crusts from brownie, and cut into 25 pieces.
  7. Store in a covered container, and refrigerate until serving time.
