Ham, Cheddar & Apple Tea Sandwiches

Ingredients
  • 12 slices thin white bread*, frozen
  • 6 slices sharp Cheddar cheese
  • 6 slices deli-style Tavern ham
  • 1 large Granny Smith apple
  • 2 tablespoons apple butter*
  • 2 tablespoons stone-ground mustard
  • ½ teaspoon finely minced fresh rosemary
Instructions
  1. Using a 2½x1½-inch diamond-shaped cutter, cut 24 shapes from frozen bread, discarding crusts. Cover bread shapes with damp paper towels, and let thaw slightly, approximately 15 minutes.
  2. Using the same cutter, cut 12 shapes from cheese and 24 shapes from ham.
  3. Using a mandoline on the ⅛-inch setting, cut 12 slices from apple. Using the same diamond-shaped cutter, cut 12 shapes from apple slices.
  4. In a small bowl, stir together apple butter, mustard, and rosemary. Spread mixture in an even layer onto bread diamonds.
  5. On mustard side of each of 12 bread shapes, stack ingredients in the following order: 1 cheese shape, 1 apple shape, 2 ham shapes, and another bread shape, mustard side down. Serve immediately, or cover with damp paper towels, place in a covered container, refrigerate, and serve within 3 hours.
Notes
*We used Dave’s White Bread Done Right and White House Apple Butter.
