Ham, Cheddar & Apple Tea Sandwiches
- 12 slices thin white bread*, frozen
- 6 slices sharp Cheddar cheese
- 6 slices deli-style Tavern ham
- 1 large Granny Smith apple
- 2 tablespoons apple butter*
- 2 tablespoons stone-ground mustard
- ½ teaspoon finely minced fresh rosemary
- Using a 2½x1½-inch diamond-shaped cutter, cut 24 shapes from frozen bread, discarding crusts. Cover bread shapes with damp paper towels, and let thaw slightly, approximately 15 minutes.
- Using the same cutter, cut 12 shapes from cheese and 24 shapes from ham.
- Using a mandoline on the ⅛-inch setting, cut 12 slices from apple. Using the same diamond-shaped cutter, cut 12 shapes from apple slices.
- In a small bowl, stir together apple butter, mustard, and rosemary. Spread mixture in an even layer onto bread diamonds.
- On mustard side of each of 12 bread shapes, stack ingredients in the following order: 1 cheese shape, 1 apple shape, 2 ham shapes, and another bread shape, mustard side down. Serve immediately, or cover with damp paper towels, place in a covered container, refrigerate, and serve within 3 hours.
