Ingredients
  1. 1¼ cups cake flour
  2. ¾ teaspoon baking powder
  3. ¼ teaspoon salt
  4. ¼ teaspoon baking soda
  5. 6 tablespoons unsalted butter, softened
  6. ¾ cup sugar
  7. 6 tablespoons strawberry preserves
  8. 2 large eggs, at room temperature
  9. ½ teaspoon vanilla extract
  10. Red paste food coloring
  11. ¼ cup buttermilk, at room temperature
  12. 1 recipe Strawberry Icing (recipe follows)
  13. Garnish: strawberries
Instructions
  1. Preheat oven to 350°.
  2. Line a (24-well) mini muffin pan with cupcake liners.
  3. In a large bowl, sift flour, baking powder, salt, and baking soda together. Set aside.
  4. In the bowl of a mixer, beat butter and sugar at medium-high speed until light and fluffy, approximately 4 minutes. Add preserves and eggs, one at a time, beating well after each addition. Scrape down sides of bowl. Add vanilla and enough food coloring to achieve desired color.
  5. With mixer at lowest speed, gradually add flour mixture to butter mixture, alternately with buttermilk, beginning and ending with flour mixture.
  6. Divide batter evenly among prepared wells of pan.
  7. Bake until a wooden pick inserted in the center of a cupcake comes out clean, 12 to 18 minutes. Let cool completely on a wire rack.
  8. Place Strawberry Icing in a pastry bag fitted with a medium round tip. Pipe icing onto each cupcake.
  9. Garnish with strawberries, if desired.

Yield: approximately 1½ cups • Preparation: 6 minutes

  1. 4 ounces cream cheese, softened
  2. ½ cup unsalted butter, softened
  3. 2 tablespoons strawberry preserves
  4. 1 teaspoon vanilla extract
  5. 2 cups confectioners’ sugar
  6. ¼ teaspoon salt
Instructions
  1. In the bowl of a mixer, beat cream cheese and butter at medium-high speed until well combined and smooth, 2 to 3 minutes.
  2. Add strawberry preserves and vanilla, beating until well combined. Add confectioners’ sugar and salt, beating until icing is uniform. Use immediately.

  1. I used to have a subscription to Tea Time Magazine and loved every minute. I would get the magazine relax on the rear porch with a cup of tea. Today I decided to make the strawberry cupcakes for my birthday treat. They are delicious so much so I am going to renew my subscription.
