
Rice-based bread, steamed lobster, shredded carrots, and fresh basil combine in this innovative and elevated take on a Chinese spring roll.
Lobster “Spring Roll” Tea Sandwiches

Ingredients
- 1⁄4 cup creamy peanut butter
- 1 tablespoon rice vinegar
- 1 tablespoon tamari soy sauce
- 1 tablespoon honey
- 1⁄2 teaspoon grated fresh garlic
- 2 tablespoons mayonnaise
- 1 tablespoon fresh lemon juice
- 1 teaspoon hot pepper sauce
- 1⁄2 teaspoon fine sea salt
- 1⁄2 pound lobster tails, cooked, shells removed, and finely chopped*
- 1⁄4 cup coarsely grated carrot**
- 2 tablespoons finely chopped fresh basil
- 2 cocktail cucumbers
- 24 slices gluten-free rice-based bread***, frozen
Instructions
- In a small bowl, whisk together peanut butter, vinegar, soy sauce, honey, and garlic until well combined.
- In a medium bowl, whisk together mayonnaise, lemon juice, hot pepper sauce, and salt. Add lobster, carrot, and basil, tossing to combine.
- Using a mandoline, slice cucumbers into 1⁄16-inch-thick rounds. Reserve 36 slices for garnish.
- Using a large knife, trim and discard crusts from each frozen bread slice to make 24 (2 1⁄2x1 1⁄4-inch) rectangles. Place bread in a resealable plastic bag to let thaw and prevent drying out during assembly.
- Spread a thin layer of peanut butter mixture onto bread rectangles. On peanut butter side of 12 bread rectangles, shingle 3 or 4 cucumber slices. Spread approximately 2 teaspoons lobster mixture each onto cucumber layer. Top with remaining 12 slices bread, peanut butter side down. Serve immediately, or cover with damp paper towels, place in a covered container, refrigerate, and serve within 2 hours.
- Just before serving, garnish each sandwich with 3 reserved cucumber slices each.

*Most seafood departments at grocery stores will steam the tails upon request.
