
The macaron, or the “supermodel of the food world,” as Elisabeth affectionately calls it, still holds prominence in the brand’s identity but has evolved with the times and has made room for other noteworthy pastries and specialized menus to garner attention. “The way that Ladurée functions to create new pastries or new macarons is very similar to a fashion house,” Elisabeth remarks. “We have collections, new colors, and new flavors that exist very similar to a spring/summer 2022 release. It’s not like a regular bakery or restaurant, as we’re really inspired by fashion and that whole world. After the season or collection ends, it vanishes. We have the core collection, but the seasonal offerings and collections are limited editions.”
