Honey Tee-Thyme Cookies

These diamond-shaped Honey Tee-Thyme Cookies are decorated with pink and green meringue icing to mimic a golfer’s argyle socks.

Honey Tee-Thyme Cookies
Yield: 2½ dozen cookies • Preparation: 40 minutes • Refrigerate: 2 hours • Bake: 8 to 10 minutes • Cool: 30 minutes

Ingredients
  1. ½ cup unsalted butter, softened
  2. ½ cup sugar
  3. 2 tablespoons honey
  4. 1 teaspoon vanilla extract
  5. 1 large egg yolk
  6. 1¼ cups all-purpose flour
  7. 1 teaspoon dried thyme
  8. ¾ teaspoon salt
  9. 2 tablespoons cold heavy whipping cream
  10. 1 recipe Meringue Icing (recipe follows)
Instructions
  1. In a large bowl, combine butter, sugar, honey, and vanilla. Beat at high speed with an electric mixer until creamy, approximately 4 minutes. Add egg yolk, mixing well. Set aside.
  2. In a small bowl, combine flour, thyme, and salt, stirring well. Add flour mixture to butter mixture, beating at lowest speed until a dough forms.
  3. Add cream, mixing well. Shape dough into a disk, wrap with plastic wrap, and refrigerate for at least 2 hours.
  4. Preheat oven to 350°.
  5. Line 2 baking sheets with parchment paper. Set aside.
  6. On a lightly floured surface, roll dough to ¼-inch thickness. Using a 2-inch diamond cutter, cut as many cookies as possible. Place cookies 1 inch apart on prepared baking sheets.
  7. Bake until edges are lightly browned, 8 to 10 minutes. Cool on pan for 5 minutes. Remove to wire racks to cool completely.
  8. Decorate with Meringue Icing, as desired, and let dry. Store in an airtight container at room temperature for up to 1 week.

Meringue Icing
Yield: 2 cups • Preparation: 5 minutes

Ingredients
  1. ¼ cup cold water
  2. 3 tablespoons meringue powder
  3. 2 cups confectioners’ sugar
  4. Assorted colors concentrated paste*
Instructions
  1. In a medium bowl, combine water and meringue powder, whisking until frothy. Add confectioners’ sugar, whisking until smooth.
  2. Divide icing among small bowls, 1 per paste color used. Add desired amount of concentrated paste. Use immediately.
Notes
  1. *For testing purposes, we used Wilton Icing Colors in juniper green, kelly green, rose petal pink, and pink.
