Ham & Pineapple Pinwheels

Pineapple melds wonderfully with ham, arugula, and Dijon mustard in this simple, yet oh-so tasty, savory. Pictured with our Curried Shrimp & Mango Salad Tea Sandwiches and Strawberry & Goat Cheese Crostini.

Ham & Pineapple Pinwheels
Serves: 24
 
Ingredients
  • 4 ounces cream cheese, softened
  • 2 tablespoons finely chopped dried pineapple
  • 1 tablespoon pineapple preserves
  • 1 tablespoon Dijon mustard
  • 3 large flour tortillas
  • 9 thin slices deli ham
  • 1 1⁄2 ounces arugula or spinach
  • Garnish: additional pineapple preserves
Instructions
  1. In a small bowl, stir together cream cheese, dried pineapple, pineapple preserves, and Dijon mustard.
  2. Spread 3 tablespoons cream cheese mixture onto each tortilla. Place 3 ham slices over cream cheese layer on each tortilla. Top ham layer with an even layer of arugula or spinach.
  3. Roll up tortillas tightly. Wrap each tortilla in plastic wrap, and refrigerate for at least an hour and up to a day.
  4. Just before serving, unwrap tortillas and place on a cutting surface. Using a serrated knife in a gentle sawing motion, trim and discard ends from each tortilla. Cut each tortilla into 8 slices.
  5. Just before serving, garnish slices with a dollop of pineapple preserves, if desired.
