Ham & Cheese Flower Sandwiches

The mild flavor of Muenster cheese along with briny ham are wonderful together in these charming flower-shaped tea sandwiches whose centers are filled with diced cherry tomatoes. Ham & Cheese Flower Sandwiches
Serves: 6
 
Ingredients
  • 6 slices white sandwich bread, frozen
  • 6 thin slices deli-style ham
  • 3 thin slices Muenster cheese
  • 2 tablespoons mayonnaise
  • 1 teaspoon yellow mustard
  • 2 tablespoons diced cherry tomatoes
Instructions
  1. Using a 2¼-inch flower-shaped cutter, cut 12 shapes from frozen bread slices. Using a 1-inch round cutter, cut centers from 6 bread flowers. To prevent bread from drying out during assembly and thawing, cover with damp papers towels, or store in a resealable plastic bag.
  2. Using the same flower-shaped cutter, cut 6 shapes from cheese slices and 12 shapes from ham slices, discarding scraps.
  3. In a small bowl, stir together mayonnaise and mustard until combined to make an aïoli.
  4. Using a small offset spatula, spread a thin, even layer of aïoli onto bread flowers. On aïoli side of 6 whole bread flowers, layer on each 2 ham flowers and a cheese flower, aligning shapes. Top with bread flowers with centers cut out. Serve immediately, or cover with damp paper towels, place in a covered container, and refrigerate for a few hours until serving time.
  5. Just before serving, fill each flower center with diced tomatoes.
