Ham, Cheddar & Fig Tea Sandwiches
Serves: 12
Ingredients
- 12 slices white bread, frozen
- 6 slices sharp white Cheddar cheese
- 12 slices smoked ham
- ¼ cup salted butter
- 2 tablespoons fig preserves*
- 1 cup lightly packed rocket leaves (arugula)
- 2 tablespoons English mustard*
Instructions
- Using a 2½-inch square cutter, cut 12 shapes from frozen bread, discarding scraps. To prevent drying out, place bread squares in a resealable plastic bag, and let thaw.
- Using the same square cutter, cut 6 squares from cheese slices and 12 squares from ham slices, discarding scraps.
- Spread a thin layer of butter onto 12 bread squares. Onto 6 bread squares, spread 1 teaspoon fig preserves. Place several rocket leaves on top of jam, trimming excess rocket as needed. Top each with 2 ham squares and a cheese square. Onto remaining 6 bread squares, spread 1 teaspoon mustard. Place each, mustard side down, atop cheese to make 6 whole sandwiches.
- Using a long, serrated bread knife in a gentle sawing motion, cut each square sandwich in half diagonally into 2 equal triangles. Serve immediately, or cover with damp paper towels, place in an airtight container, refrigerate, and serve within an hour.
