
Inspired by the manner in which teas are designated for auction, Brett and Mairead chose “Lot 35” as the moniker for the new line. “We have 26 loose teas plus an additional 6 iced teas, so there’s quite a selection,” Mairead says. Each hotel will have the flexibility of customizing its tea offerings to meet the tastes of its patrons. Although the program will feature loose-leaf teas wherever guests are served a pot of tea, such as Fairmont Gold lounges, restaurants, and room service, individually wrapped pyramid sachets will be placed in guest rooms so patrons can prepare teas to their own preferences. She notes that the tea in the sachets will be the same grade as the loose tea served elsewhere, not what one would typically find in a tea bag.
“The tea bag material, string, and tag are 100 percent biodegradable—not synthetic nylon,” explains Gerry.

Brett emphasizes how grateful he is that Metropolitan Tea has been eager to partner with Fairmont in this product-line upgrade, including inviting Mairead and him to their Toronto facilities to finalize the Lot 35 selections and to have significant input in creating the blends based on the knowledge they gained while traveling to India and Sri Lanka. “We just thought it was great to take stock of our tea program and really look to see what we’re selling and delivering and give a much better product,” Brett says. “That was the reason for our trip.” And by September 1, those who dine at any of the more than 40 Fairmont hotels in the Americas will be the beneficiaries of their journey.
