Cranberry-Walnut Ham Salad Tea Sandwiches

Classic ham salad is embellished for autumn with the addition of dried cranberries and toasted walnuts for extra taste and texture. Pictured with our Watercress Pesto & Steak Crostini.

Cranberry-Walnut Ham Salad Tea Sandwiches
Serves: 16
 
Ingredients
  • 1 ½ cups finely chopped ham
  • ½ cup sweetened dried cranberries, chopped
  • ⅓ cup finely chopped celery
  • ¼ cup finely chopped toasted walnuts
  • ½ cup mayonnaise
  • 1 tablespoon plus 1 teaspoon whole-grain mustard
  • 1 teaspoon fresh lemon juice
  • ¼ teaspoon seasoned salt
  • 16 thin-cut slices whole grain bread
Instructions
  1. In a medium bowl, stir together ham, cranberries, celery, and walnuts.
  2. In a separate bowl, whisk together mayonnaise, mustard, lemon juice, and seasoned salt. Add to ham mixture, stirring well to combine. Spread ¼ cup ham mixture onto each of 8 bread slices. Top each with a remaining bread slice to make 8 whole sandwiches.
  3. Using a serrated bread knife in a gentle sawing motion, trim and discard crusts from sandwiches. Cut each sandwich diagonally to make 2 triangles. Serve immediately, or cover with damp paper towels, place in a covered container, and refrigerate for a few hours until serving time.
Notes
Make-Ahead Tip: Ham salad can be made up to 3 days in advance, covered tightly, and refrigerated until needed.
