Christmas Turkey Salad Sandwiches

Christmas Turkey Salad Sandwiches

Ingredients
  • 1⁄2 cup mayonnaise
  • 6 tablespoons sweet mango chutney
  • 2 tablespoons fresh lemon juice
  • 1 1⁄2 tablespoons curry powder
  • 1⁄2 teaspoon fine sea salt
  • 1⁄4 teaspoon ground black pepper
  • 3 cups finely chopped roasted turkey
  • 1⁄3 cup chopped toasted sliced almonds
  • 3 tablespoons finely chopped dried apricot
  • 3 tablespoons chopped Granny Smith apple
  • 2 tablespoons finely chopped green onion (green tops only)
  • 2 tablespoons chopped golden raisins
  • 12 slices potato bread
Instructions
  1. In a medium bowl, stir together mayonnaise, chutney, lemon juice, curry powder, salt, and pepper. Fold in turkey, almonds, apricot, apple, green onion, and raisins.
  2. Spread a thick layer of turkey salad onto 6 bread slices. Top each with a remaining bread slice to make 6 whole sandwiches.
  3. Using a serrated bread knife in a gentle sawing motion, trim and discard crusts from sandwiches, creating squares. Cut each sandwich into 4 equal rectangles. Serve immediately, or cover with damp paper towels, place in a covered container, and refrigerate for a few hours until serving time.
