Christmas Turkey Salad Sandwiches

Ingredients
- 1⁄2 cup mayonnaise
- 6 tablespoons sweet mango chutney
- 2 tablespoons fresh lemon juice
- 1 1⁄2 tablespoons curry powder
- 1⁄2 teaspoon fine sea salt
- 1⁄4 teaspoon ground black pepper
- 3 cups finely chopped roasted turkey
- 1⁄3 cup chopped toasted sliced almonds
- 3 tablespoons finely chopped dried apricot
- 3 tablespoons chopped Granny Smith apple
- 2 tablespoons finely chopped green onion (green tops only)
- 2 tablespoons chopped golden raisins
- 12 slices potato bread
Instructions
- In a medium bowl, stir together mayonnaise, chutney, lemon juice, curry powder, salt, and pepper. Fold in turkey, almonds, apricot, apple, green onion, and raisins.
- Spread a thick layer of turkey salad onto 6 bread slices. Top each with a remaining bread slice to make 6 whole sandwiches.
- Using a serrated bread knife in a gentle sawing motion, trim and discard crusts from sandwiches, creating squares. Cut each sandwich into 4 equal rectangles. Serve immediately, or cover with damp paper towels, place in a covered container, and refrigerate for a few hours until serving time.
