Prosciutto & Pear Tea Sandwiches
Serves: 12
Ingredients
- ½ cup freshly grated Gruyère cheese
- ¼ cup mascarpone cheese
- 1 tablespoon honey
- ½ teaspoon ground black pepper
- 8 slices white bread
- 2 large Anjou pears
- ¾ pound prosciutto, thinly sliced
- Garnish: fresh mint leaves
Instructions
- In a medium bowl, stir together cheeses, honey, and pepper. Spread a layer of cheese mixture onto each bread slice.
- Using a Y-shaped peeler, peel pears. Using a sharp knife, cut pears in half lengthwise. Avoiding the core, cut halves into ¼-inch-thick slices. Arrange pear slices in a single layer on 4 bread slices. Top pear layer with prosciutto. Cover with remaining bread slices, spread side down.
- Using a serrated bread knife in a gentle sawing motion, trim and discard crusts from sandwiches. Cut each sandwich into 3 (3×1-inch) rectangles. Serve immediately, or cover with damp paper towels, place in an airtight container, and refrigerate until serving time.
- Garnish with mint, if desired.
