Roast Beef and Horseradish Tea Sandwiches
Yield: 9 sandwiches • Preparation: 15 minutes

Ingredients
  1. 9 slices rye bread, crusts removed
  2. 1 recipe Horseradish Cream (see below)
  3. 9 (2-inch) squares Swiss cheese
  4. ½ pound thinly sliced deli roast beef
  5. Garnish: microgreens
Instructions
  1. Cut each slice of rye bread into 2 (2-inch) squares.*
  2. Spread Horseradish Cream on 9 bread squares. Top each with 1 slice Swiss cheese and desired amount of roast beef. Top with remaining bread squares.
  3. Garnish with microgreens, if desired.
Notes
  1. *We used a 2-inch square cutter instead of a bread knife to achieve uniformity.

Horseradish Cream
Yield: approximately 1 cup • Preparation: 5 minutes • Refrigerate: 2 hours

Ingredients
  1. 1 cup sour cream
  2. 1 tablespoon prepared horseradish
  3. 1 tablespoon Worcestershire sauce
  4. 1 teaspoon hot pepper sauce
  5. ½ teaspoon coarsely ground black pepper
Instructions
  1. In a small bowl, combine sour cream, horseradish, Worcestershire sauce, hot pepper sauce, and black pepper. Stir to combine. Refrigerate for 2 hours before serving.
