Lemon-Lime Salmon Cups

Zesty Lemon-Lime Salmon Cups are a wonderful flavor addition to the savory course at your afternoon tea.

Lemon-Lime Salmon Cups
Serves: 8
 
Ingredients
  • 4 ounces cream cheese, softened
  • 1 tablespoon heavy whipping cream
  • ¼ cup very finely chopped smoked salmon
  • 1 teaspoon fresh lemon zest
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon fresh lime zest
  • 1 teaspoon fresh lime juice
  • ⅛ teaspoon ground black pepper
  • 8 mini phyllo cups, such as Athens
  • Garnish: fresh lemon zest, fresh lime zest
Instructions
  1. In a small mixing bowl, combine cream cheese and cream. Beat at high speed with a mixer until light
and fluffy. Reduce speed to medium, and add salmon, lemon zest, lemon juice, lime zest, lime juice, and pepper, beating until incorporated.
  2. Transfer salmon mixture to a piping bag fitted with an open-star tip (Wilton #32). Pipe into phyllo cups in a decorative fashion.
  3. Garnish with lemon and lime zest, if desired.
Notes
Make-Ahead Tip: Salmon mixture can be made a day ahead and stored in the refrigerator until needed. Let soften before using.
