
Zesty Lemon-Lime Salmon Cups are a wonderful flavor addition to the savory course at your afternoon tea.
Lemon-Lime Salmon Cups
Serves: 8
Ingredients
- 4 ounces cream cheese, softened
- 1 tablespoon heavy whipping cream
- ¼ cup very finely chopped smoked salmon
- 1 teaspoon fresh lemon zest
- 1 teaspoon fresh lemon juice
- 1 teaspoon fresh lime zest
- 1 teaspoon fresh lime juice
- ⅛ teaspoon ground black pepper
- 8 mini phyllo cups, such as Athens
- Garnish: fresh lemon zest, fresh lime zest
Instructions
- In a small mixing bowl, combine cream cheese and cream. Beat at high speed with a mixer until light and fluffy. Reduce speed to medium, and add salmon, lemon zest, lemon juice, lime zest, lime juice, and pepper, beating until incorporated.
- Transfer salmon mixture to a piping bag fitted with an open-star tip (Wilton #32). Pipe into phyllo cups in a decorative fashion.
- Garnish with lemon and lime zest, if desired.
Notes
Make-Ahead Tip: Salmon mixture can be made a day ahead and stored in the refrigerator until needed. Let soften before using.
