Cucumber-Boursin Tea Sandwiches

The simple and delicious Cucumber-Boursin Tea Sandwiches are a delightful bite.

Cucumber-Boursin Tea Sandwiches

Ingredients
  • 6 slices very thin white sandwich bread, frozen
  • 1 (5.2-ounce) package shallot and chive–flavored Boursin cheese, at room temperature
  • 1 (6-inch) section English cucumber with peel, finely chopped
Instructions
  1. Using a 2¹⁄8-inch flower-shaped cutter, cut 24 shapes from frozen bread slices. Using a ¾-inch round cutter, cut centers from 12 flower shapes.
  2. Place cheese in a piping bag fitted with a medium round tip (Wilton #12), and pipe cheese around edges of 12 solid bread flowers, filling centers. Place a bread flower with a center cutout on top of cheese. Place sandwiches in a resealable plastic bag, or cover with damp paper towels while bread defrosts to prevent sandwiches from drying out.
  3. Just before serving, fill centers of tea sandwiches with chopped cucumber.
Notes
Make-Ahead Tip: Flower shapes can be cut from bread a day in advance and stored in a resealable plastic bag to retain freshness. Sandwiches can be assembled a few hours in advance, covered with damp paper towels, and stored in an airtight container in the refrigerator until serving time.
