Gluten-Free, Low-Carb Irish Cheddar, Ham & Chive Scones
Serves: 8 scones
Ingredients
- 2¾ cup almond flour
- ¼ cup coconut flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- 4 tablespoons unsalted Irish butter*
- ½ cup shredded Irish Cheddar cheese*
- ½ cup cooked diced ham
- ¼ cup diced fresh chives
- ¼ plus 1 to 2 tablespoons cup cold heavy whipping cream
- 2 eggs
- Garnish: everything bagel seasoning
Instructions
- Preheat oven to 350°. Line a rimmed baking sheet with parchment paper.
- In a large bowl, whisk together almond flour, coconut flour, baking powder, and salt. Using a pastry blender or 2 forks, cut butter into flour mixture until it resembles coarse crumbs. Stir in cheese, ham, and chives.
- In a small bowl, whisk together ¼ cup cold cream and eggs until lightly blended. Add to flour mixture, stirring until a dough begins to form.
- Turn out dough onto a lightly floured** surface and shape into a 1½-inch-thick circle. Using a sharp knife, cut dough circle into 8 wedges. Place scones, evenly spaced, on prepared baking sheet.
- Brush tops of scones with remaining 1 to 2 tablespoons cream.
- Garnish scones with a sprinkle of everything bagel seasoning, if desired.
- Bake until scones are lightly browned, 20 to 25 minutes. Serve warm.
