
These familiar ham and cheese sandwiches are revamped with cheddar scones and honey mustard.
Ham and Cheese Sandwiches

Ingredients
- ½ cup harvest ground mustard
- ¼ cup honey
- 1 recipe Cheddar Scones (see below)
- 8 very thin slices smoked ham, cut in half
Instructions
- In a medium bowl, whisk together mustard and honey. Set aside.
- Slice scones in half horizontally.
- Place slices of ham on top of bottom halves of scones, folding ham to fit. Spread 1/2 teaspoon honey-mustard mixture onto each piece of ham. Top with remaining half of scone
- Serve with remaining honey mustard, if desired.

Cheddar Scones

Ingredients
- 2 cups all-purpose flour
- 1 tablespoon sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- ¼ cup cold unsalted butter, cut into pieces
- ¾ cup half-and-half
- ¾ cup shredded sharp Cheddar, divided
Instructions
- Preheat oven to 350°.
- Line a baking sheet with parchment paper. Set aside.
- In a large bowl, combine flour, sugar, baking powder, and salt, whisking to remove any lumps. Using a pastry blender, cut butter into dry ingredients until mixture is crumbly. Add half-and-half, 1 tablespoon at a time, until dry ingredients are moistened. Add 1/2 cup cheese, stirring to combine.
- On a lightly floured surface, lightly roll dough into a 7-inch square. Using a 1 3/4-inch square biscuit cutter, cut 16 scones. Place on prepared baking sheet. Sprinkle remaining 1/4 cup cheese over tops of scones.
- Bake until lightly golden, approximately 10 minutes. Cool completely on baking sheet.
