The peppery bite of fresh watercress is an ideal complement to the ham and other ingredients of this simple tea sandwich. Pictured with our Smoked Salmon & Caper Cream Cheese-Filled Cucumber Canapés.
Honey Ham & Dijon Tea Sandwiches
Serves: 8
Ingredients
- 8 slices white sandwich bread, frozen
- 1 tablespoon plus 1 teaspoon mayonnaise
- 1 tablespoon plus 1 teaspoon stone-ground Dijon mustard
- 3 tablespoons unsalted butter, softened
- 8 very thin slices honey ham*
- 1⁄2 cup loosely packed watercress
- Garnish: watercress
Instructions
- Using a 2-inch square cutter, cut 16 squares from frozen bread slices, discarding scraps. To prevent bread from drying out during assembly, cover with damp paper towels or store in a resealable plastic bag, and let thaw at room temperature.
- In a small bowl, stir together mayonnaise and mustard. Spread a layer of mixture onto 8 bread squares. Spread a layer of butter onto remaining 8 bread squares. Fold each ham slice in half, and place on top of mayonnaise spread side of bread squares, gathering and folding ham to ruffle it and trim- ming ham to fit, if necessary. Top ham with watercress and cover with remaining bread squares, butter side down.
- Garnish with watercress, if desired.
Notes
*If ham has excess moisture, pat dry with paper towels.
Make Ahead Tip: Bread squares can be cut a day in advance and stored in a resealable plastic bag. Sandwiches can be assembled earlier in the day, covered with damp paper towels, placed in an airtight container, and refrigerated. Garnish just before serving.
