
Lemon Aïoli adds zest to these gluten-free Cucumber-Feta Canapés.
Cucumber-Feta Canapés

Ingredients
- 1 (8-ounce) package feta cheese
- 12 gluten-free crackers, such as Blue Diamond Almond Nut Thins
- 12 (¼-inch) slices English cucumber
- 1 recipe Lemon Aïoli (recipe follows)
- Garnish: lemon curls
Instructions
- Cut feta cheese lengthwise into 3 (¼-inch) slices. Using a 1¾-inch flower-shaped cutter, cut 4 flower shapes from each slice, discarding scraps.
- On each cracker, layer a cucumber slice, a dollop of Lemon Aïoli, and a feta flower.
- Garnish each with a lemon curl, if desired.
- Serve immediately.
Notes
- • To help keep crackers from becoming soggy, blot cucumber slices on paper towels. Cucumber and cheese slices can be assembled a couple of hours in advance and refrigerated in a covered container until needed. Place on crackers just before serving. For maximum freshness and crispnesss, assemble canapés as close to serving time as possible.

- ¼ cup mayonnaise
- ½ teaspoon fresh lemon zest
- ½ teaspoon fresh lemon juice
- ⅛ teaspoon salt
- ⅛ teaspoon ground black pepper
Instructions
- In a small bowl, combine mayonnaise, lemon zest, lemon juice, salt, and pepper, stirring to blend. Refrigerate in a covered container until needed.
