
Zucchini Latkes

Yields 10 latkes
Ingredients
- 2¼ cups coarsely grated zucchini (1 large zucchini)
- 1 teaspoon salt
- ½ cup freshly grated Parmesan cheese
- ¼ cup all-purpose flour
- 1 large egg, lightly beaten
- 1 tablespoon minced green onion
- 1 tablespoon minced fresh parsley
- 1 tablespoon minced fresh chives
- 1/8 teaspoon ground black pepper
- 1/3 cup canola oil
- 1 recipe Lemon Crème Fraîche (recipe follows)
Instructions
- In a sieve, combine zucchini and salt, tossing well. Let drain for 15 minutes. Squeeze out excess liquid.
- In a medium bowl, combine zucchini, cheese, fl our, egg, green onion, parsley, chives, and pepper, stirring well.
- In a large skillet, heat oil over medium-high heat. Using a levered 1½-tablespoon scoop, spoon batter into hot oil. Flatten latkes with a spatula. Fry until golden brown, 2 to 3 minutes per side. Drain on paper towels.
- Serve warm latkes with Lemon Crème Fraîche, if desired.
Notes
- Make-Ahead Tip: Latkes can be made earlier in the day and refrigerated in a covered container until needed. When ready to serve, place on a parchment lined baking sheet, and warm in a 350° oven until hot, approximately 5 minutes.

Lemon Crème-Fraîche

- ½ cup crème fraîche or sour cream
- 2 teaspoons fresh lemon juice
- Garnish: minced fresh chives
Instructions
- In a small bowl, combine crème fraîche and lemon juice. Cover, and refrigerate until serving time.
- Garnish with chives, if desired.
