A trio of soft cheeses are the foundation for the savory filling of these simple, yet delicious, turkey tea sandwiches.

Blue Cheese & Turkey Tea Sandwiches
 
Makes approximately 16
Ingredients
  • ½ cup salted butter, softened
  • ½ cup large-curd cottage cheese
  • 1 (3-ounce) package cream cheese, softened
  • 2 tablespoons blue cheese crumbles
  • ½ teaspoon Worcestershire sauce
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon ground black pepper
  • 16 slices white bread
  • ½ pound sliced deli turkey
Instructions
  1. In a medium mixing bowl, beat together butter, cottage cheese, cream cheese, blue cheese, Worcestershire sauce, garlic powder, onion powder, and pepper with a mixer at medium-high speed until well blended. Spread cheese mixture in a thin layer onto bread slices. Top cheese layer of 8 bread slices evenly with turkey. Cover with remaining bread slices, cheese side down, to make 8 whole sandwiches. Place sandwiches in an airtight container, and freeze until very firm.
  2. • Using a serrated bread knife in a gentle sawing motion, cut and discard crusts from bread slices. Cut each sandwich into 2 equal rectangles to make a total of 16 tea sandwiches. Serve immediately, or cover with damp paper towels, place in a covered container, refrigerate, and serve within 2 hours
Notes
MAKE-AHEAD TIP: Cheese mixture can be prepared a day in advance, stored in an airtight container, and refrigerated. For a spreadable consistency, let come to room temperature just before using.
