Tea Sandwiches

A delightfully delicious homemade Green Plum Chutney turns these ordinary ham tea sandwiches into something special and oh-so British. Pictured with our Cucumber & Radish Triple-Stack Tea Sandwiches with Terragon-Lemon Butter.

Green Plum Chutney & Ham Tea Sandwiches
 
Makes 12
Ingredients
  • 1 cup finely chopped ham
  • ¼ cup mayonnaise
  • Green Plum Chutney (recipe follows)
  • 12 slices seeded bread
  • ½ cup fresh parsley leaves
Instructions
  1. In a medium bowl, stir together ham, mayonnaise, and Green Plum Chutney until well combined.
  2. Divide ham mixture among 6 bread slices and spread in an even layer, leaving a ½-inch border of bread. Top evenly with parsley leaves. Top each with a remaining bread slice to make 6 whole sandwiches.
  3. Using a serrated bread knife in a gentle sawing motion, trim and discard crusts (½-inch border of bread) from sandwiches. Cut each sandwich into 2 rectangular sandwiches. Serve immediately, or cover with damp paper towels, place in a covered container, refrigerate, and serve within 2 hours.

Green Plum Chutney
 
Makes approximately ¾ cup
Ingredients
  • 1 teaspoon olive oil
  • ¼ cup minced yellow onion
  • 1 jalapeño pepper, seeded and minced
  • 1 teaspoon minced fresh ginger
  • 2 tablespoons white distilled vinegar
  • 1 teaspoon granulated sugar
  • ½ teaspoon fine sea salt
  • ¼ teaspoon mustard seed
  • ⅛ teaspoon turmeric powder
  • 2 green plums, pitted and finely chopped
  • ¼ cup finely chopped green tomato
Instructions
  1. In a small saucepan, heat oil over medium heat. Add onion, pepper, and ginger. Cook, stirring occasionally, until softened, 3 to 5 minutes. Stir in vinegar, sugar, salt, mustard seed, and turmeric powder until well combined. Stir in green plums and green tomatoes until well combined. Cook, stirring occasionally, until fruit softens and mixture thickens, 10 to 15 minutes. Let cool completely. Transfer to an airtight container, refrigerate, and use within a week.
