Bacon, Apple & Brie Pastries

Bacon, Apple & Brie Pastries

Ingredients
  • 1 tablespoon unsalted butter
  • 1⁄2 cup finely chopped Rome or Granny Smith apple
  • 1 teaspoon granulated sugar
  • 1⁄4 teaspoon packed light brown sugar
  • 1⁄4 teaspoon ground cinnamon
  • 1⁄4 teaspoon kosher salt, divided
  • 1⁄2 (17.3-ounce) package frozen puff pastry, thawed (1 sheet)
  • 2 ounces Brie cheese, cut into 1⁄2-inch pieces
  • 3 thick-cut strips applewood-smoked bacon, cooked and cut into 1⁄2x1⁄4-inch pieces
  • 1 large egg, lightly beaten
Instructions
  1. In a small saucepan, heat butter over medium heat. Stir in apple; cook until softened, 8 to 10 minutes. Stir in granulated sugar, brown sugar, cinnamon, and 1⁄8 teaspoon salt until sugar dissolves. Remove from heat. Let cool to room temperature.
  2. Preheat oven to 425°. Line a rimmed baking sheet with parchment paper.
  3. Lay puff pastry sheet on a work surface. Using a large knife, cut pastry sheet into 36 equal squares, approximately 1 1⁄8 inches each (6 rows and 6 columns). In the centers of 18 pastry squares, place a cheese piece. Top cheese with an even layer each of bacon and apple mixture. Lightly brush edges of pastry squares with a small amount of egg. Cover each with a remaining plain pastry square, pressing edges together to seal tightly. Place 2 inches apart on prepared baking sheet.
  4. Pierce tops of pastries with the tip of a sharp knife. Brush tops of pastries with remaining egg and sprinkle with remaining 1⁄8 teaspoon salt.
  5. Bake until pastries are flaky and golden brown, 8 to 10 minutes. Serve warm.
