Follow these steps to make the cucumber flowers in Cucumber Flower Canapés pictured above.
Step 1: Thinly slice an English cucumber, and fold each cucumber slice in half and then in quarters.
Step 2: Pinch the inner fold between your thumb and forefinger.
Step 3: Spread a bread square with mayonnaise, and place folded cucumber slice on it, green edges up. Repeat 3 times.
Step 4: Arrange folds to resemble a flower, and top with lemon zest.
