From “Perked Up” by Barbara Ross in Irish Coffee Murder Makes 1 round loaf
Ingredients
Neutral oil, for greasing pan
3⅓ cups all-purpose flour
⅓ cup granulated sugar
2 tablespoons baking powder
1 teaspoon fine sea salt
½ cup unsalted butter, softened
1 cup raisins
2 eggs, slightly beaten
¾ cup whole milk
Instructions
Preheat oven to 350°. Lightly oil the bottom and sides of a 9-inch round cake pan.
In a large bowl, whisk together flour, sugar, baking powder, and salt. Using fingers, work butter into flour mixture until it has the consistency of cornmeal. Stir in raisins.
In a medium bowl, whisk together eggs and milk. Add to flour mixture, stirring until a dough forms.
Turn dough out onto a floured surface, and knead dough for 2 minutes. Pat dough into prepared cake pan.
Bake until crust is golden and a toothpick inserted in the center comes out clean, approximately 1 hour.
