Create unique designs on your Easter egg macarons with this tried-and-true topping that is firm when set.
Ingredients
2 cups confectioners’ sugar
4 teaspoons meringue powder
3 tablespoons warm water (105° to 110°), plus more if needed
Violet Gel Food Coloring
Green Gel Food Coloring
Instructions
In a large bowl, beat together confectioners’ sugar and meringue powder with a mixer at low speed until combined. Gradually add 3 tablespoons warm water, beating together until fluid, approximately 1 minute. Increase mixer speed to high, and beat until shiny and thickened, 4 to 5 minutes.
Place ⅓ cup icing in a separate bowl. Add violet gel food coloring in small increments, stirring until desired color is achieved. Cover with a damp cloth.
Place another ⅓ cup icing in a separate bowl. Add green gel food coloring in small increments, stirring until desired color is achieved. Cover with a damp cloth. (Remaining icing will be white.)
Icing should hold a soft peak when spatula lifts out. If icing is too thick, add more water in ½ teaspoon amounts until icing is correct consistency. (If icing is too thick, it will be hard to pipe, and if it is too thin, your lines will be too thick when piped.)
Use immediately.
