In the bowl of a stand mixer, whisk together egg whites, sugar, orange juice, and pumpkin pie spice by hand. Place bowl over a saucepan of simmering water. Cook, whisking constantly, until sugar dissolves, 3 to 4 minutes. Carefully return bowl to stand mixer. Using the whisk attachment, beat at low speed, gradually increasing to high speed, until glossy, stiff peaks form, 5 to 8 minutes. Use immediately.
