Cut each apricot in half. Cut each half into thin slices.
On a clean work surface, roll first small apricot slice into a circle. Layer remaining slices from apricot half around circle until you have built up a rose. Repeat with remaining apricot slices to create a total of 16 roses. Use immediately.
