Coconut Cream Filling
Serves: 3 cups
 
Ingredients
  • 2 (8-ounce) packages cream cheese, softened
  • ½ cup confectioners’ sugar, sifted
  • 1 cup heavy whipping cream
  • ¼ cup cream of coconut
  • ¼ teaspoon coconut extract
Instructions
  1. In a large bowl, beat cream cheese and confectioners’ sugar with a mixer at medium speed until smooth, about 3 minutes, stopping to scrape sides of bowl with a rubber spatula. Add cream, cream of coconut, and coconut extract, and beat until stiff peaks form, 2 to 3 minutes. Use immediately.
