Easy Sponge Cake
Serves: 1 (13x9-inch) cake
 
Ingredients
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sugar
  • ⅔ cup self-rising flour
  • ½ teaspoon salt
Instructions
  1. Preheat oven to 375°.
  2. Spray a (13x9-inch) baking pan with baking spray. Line with parchment paper, and spray again. Set aside.
  3. In a medium bowl, beat eggs, vanilla, and sugar at high speed with an electric mixer until light and fluffy, approximately 5 minutes.
  4. Sift flour and salt over egg mixture. Gently fold in. Spread batter into prepared pan.
  5. Bake until a wooden pick inserted near center comes out clean, approximately 8 minutes. Cool in pan for 10 minutes. Remove to a wire rack to cool completely.
