Special Sunday Shrimp Frittata

In the Cat Latimer mysteries, I love writing the kitchen scenes where Shauna and Cat work on solving the recent murder while mixing up food for the morning meal. This frittata is one of my favorites for a snowy Sunday morning. I’m sure Shauna loves the ease of making this savory dish for their guests.—Lynn
Ingredients
  • 2 tablespoons vegetable oil
  • 1 bunch green onions, chopped
  • 1 yellow or red bell pepper, chopped
  • 1 (8-ounce) package sliced fresh mushrooms
  • 2 cups baby spinach (about one-third of a 6-ounce bag)
  • 1 (4-ounce) can tiny shrimp
  • 8 large eggs
  • ⅓ cup of milk
  • ¾ cup shredded mozzarella
  • 1 cup fresh fruit
Instructions
  1. Preheat oven to 375º.
  2. In a large cast-iron skillet, heat oil over medium-high heat. Add onion, pepper, mushrooms, and spinach; cook, stirring constantly, until spinach is wilted and vegetables are tender, 2 to 3 minutes. Remove skillet from heat. Add shrimp to skillet mixture, stirring to combine.
  3. In a medium bowl, whisk together eggs and milk. Pour egg mixture into skillet; gently stir.
  4. Sprinkle cheese over skillet mixture.
  5. Bake for 12 to 15 minutes, until eggs are set. Serve with fruit.
