Chicken Waldorf Salad
- 1 cup mayonnaise
- 1 tablespoon sugar
- 1 tablespoon poppy seeds
- 1 tablespoon fresh lemon juice
- 1 tablespoon champagne vinegar
- 1 tablespoon heavy whipping cream
- ¼ teaspoon salt
- 3 cups diced Gala apples
- 2 cups diced cooked chicken breast
- 1 cup red grape halves
- ⅓ cup diced celery
- ⅓ cup chopped toasted pecans
- Garnish: Bibb lettuce leaves, crackers
- In a small bowl, combine mayonnaise, sugar, poppy seeds, lemon juice, vinegar, cream, and salt, whisking well. Set aside.
- In a large bowl, combine apples, chicken, grapes, celery, and pecans.
- Add dressing, tossing to coat.
- Refrigerate in a covered container until cold, approximately 4 hours.
- Garnish individual servings with Bibb lettuce leaves and crackers, if desired.
