Chicken Waldorf Salad
 
Yield: 6 cups • Preparation: 20 minutes • Refrigerate: 4 hours
Ingredients
  • 1 cup mayonnaise
  • 1 tablespoon sugar
  • 1 tablespoon poppy seeds
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon champagne vinegar
  • 1 tablespoon heavy whipping cream
  • ¼ teaspoon salt
  • 3 cups diced Gala apples
  • 2 cups diced cooked chicken breast
  • 1 cup red grape halves
  • ⅓ cup diced celery
  • ⅓ cup chopped toasted pecans
  • Garnish: Bibb lettuce leaves, crackers
Instructions
  1. In a small bowl, combine mayonnaise, sugar, poppy seeds, lemon juice, vinegar, cream, and salt, whisking well. Set aside.
  2. In a large bowl, combine apples, chicken, grapes, celery, and pecans.
  3. Add dressing, tossing to coat.
  4. Refrigerate in a covered container until cold, approximately 4 hours.
  5. Garnish individual servings with Bibb lettuce leaves and crackers, if desired.
