Lemon Sauce 
 
Yield: 1 cup • Preparation: 10 minutes • Cook: 2 to 3 minutes
Ingredients
  • ½ cup butter
  • 3 egg yolks
  • ½ cup sugar
  • ¼ cup water
  • ¼ cup fresh lemon juice
Instructions
  1. In a small saucepan, melt butter over low heat. Remove from heat, and let cool slightly, approximately 5 minutes.
  2. Add egg yolks, sugar, water, and lemon juice. Cook over medium heat, whisking constantly until mixture thickens, 2 to 3 minutes.
  3. Remove from heat, and strain through a wire-mesh strainer. (Can be made a day ahead. Rewarm by heating on Low in a microwave, stirring frequently.)
