Easter Roll-Ups

Ingredients
  • 1 (8-ounce) package cream cheese, softened
  • ½ cup shredded mozzarella cheese
  • 2 teaspoons ranch seasoning
  • ¾ cup chopped ham
  • ¼ cup finely chopped raw broccoli florets
  • ¼ cup finely chopped red bell pepper
  • ½ teaspoon fresh lemon zest
  • 2 (10-inch) spinach tortillas
Instructions
  1. In a large bowl, beat cream cheese with a mixer at medium speed until smooth. Beat in mozzarella cheese and ranch seasoning until combined. Stir in ham, broccoli, red bell pepper, and lemon zest. Divide mixture evenly between tortillas, and spread in an even layer, leaving a ½-inch border.
  2. Roll up each tortilla into a cylinder. Place each tortilla cylinder seam side down on plastic wrap, and wrap tightly. Refrigerate for 4 hours.
  3. Just before serving, remove tortilla cylinders from refrigerator, and carefully unwrap with seam side down. Using a serrated knife in a gentle, sawing motion, trim approximately 1 inch from ends of each cylinder to neaten. Cut each cylinder crosswise into 8 slices. Serve immediately, or place in a covered container, refrigerate, and serve within 3 days
