White Chocolate–Mint Buttercream
- ½ cup unsalted butter, softened
- 5 ounces white chocolate baking bars, melted and cooled for 5 minutes
- ¾ cup confectioners’ sugar
- ¼ teaspoon peppermint extract
- ⅛ teaspoon fine sea salt
- In a large bowl, beat butter with a mixer at medium speed until smooth, 30 to 60 seconds. Beat in white chocolate. With mixer at low speed, gradually beat in sugar until combined. Beat in peppermint extract and salt. Increase mixer speed to medium, and beat until buttercream is light and fluffy, approximately 2 minutes, scraping down sides of bowl as needed. Use immediately.
