Green Plum Chutney
- 1 teaspoon olive oil
- ¼ cup minced yellow onion
- 1 jalapeño pepper, seeded and minced
- 1 teaspoon minced fresh ginger
- 2 tablespoons white distilled vinegar
- 1 teaspoon granulated sugar
- ½ teaspoon fine sea salt
- ¼ teaspoon mustard seed
- ⅛ teaspoon turmeric powder
- 2 green plums, pitted and finely chopped
- ¼ cup finely chopped green tomato
- In a small saucepan, heat oil over medium heat. Add onion, pepper, and ginger. Cook, stirring occasionally, until softened, 3 to 5 minutes. Stir in vinegar, sugar, salt, mustard seed, and turmeric powder until well combined. Stir in green plums and green tomatoes until well combined. Cook, stirring occasionally, until fruit softens and mixture thickens, 10 to 15 minutes. Let cool completely. Transfer to an airtight container, refrigerate, and use within a week.
