Whipped Ricotta Frosting
- 1 ounce cream cheese, softened
- 1⁄3 cup ricotta cheese
- 1⁄2 teaspoon vanilla extract
- 1⁄8 teaspoon fine sea salt
- 1 cup confectioners’ sugar
- 1 cup cold heavy whipping cream
- In a large bowl, beat cream cheese with a mixer at medium speed until smooth and creamy. Beat in ricotta cheese, vanilla extract, and salt until well combined. Beat in confectioners’ sugar until smooth and well combined. (Mixture will be rather loose at this point.) With mixer running, slowly pour in heavy cream in a steady stream. Increase mixer speed to high and beat until stiff peaks form. Use immediately.
