Vegetable Skeins
- 2 medium zucchini, spiralized*
- 1⁄4 cup herbed cheese spread**
- 6 slices prosciutto, cut in half lengthwise
- Gather a small bundle of spiralized zucchini, making a small loop to resemble a bundle of embroidery floss and trim excess. Pipe a small amount of herbed cheese spread in the center of the loop. Wrap 1 prosciutto piece around zucchini and herbed cheese spread. Place seam side down on serving tray. Repeat with remaining ingredients to make 12 skeins. Serve immediately, or cover with a damp paper towel and plastic wrap and refrigerate for up to an hour before serving.
*Discard any pale, soft inner pieces of zucchini.
**We used Boursin Basil & Chive Gournay Cheese.
