Pizza Sauce
Serves: approximately 1 cup
- 2 teaspoons olive oil
- 1⁄4 cup diced yellow onion
- 1 1⁄2 cloves garlic, minced
- 1 1⁄3 cups canned whole tomatoes, roughly chopped
- 1 1⁄2 teaspoons tomato paste
- 1 teaspoon granulated sugar
- 1 teaspoon red wine vinegar
- 1⁄2 teaspoon fine sea salt
- 1⁄2 teaspoon fresh thyme leaves
- 1⁄4 teaspoon ground black pepper
- In a medium saucepan, heat oil over medium-high heat. Add onion and garlic; cook, stirring occasionally, until soft and fragrant, 3 to 5 minutes.
- Stir in tomatoes, tomato paste, sugar, vinegar, salt, thyme, and pepper. Bring to a boil; reduce heat to medium-low, and cook, stirring occasionally, until sauce reduces to 1 cup, approximately 10 minutes. Remove from heat. Let cool for 30 minutes, stirring occasionally.
- Transfer sauce to the container of a blender or the bowl of a mini food processor. Blend until smooth. Use immediately, or transfer to an airtight container, refrigerate, and use within 3 days.
