Sweet Potato–Peanut Butter Bars

Ingredients
  • 3⁄4 cup quick-cooking oats
  • 1 teaspoon ground cinnamon
  • 1⁄2 teaspoon fine sea salt
  • 1⁄2 teaspoon ground ginger
  • 1⁄4 teaspoon ground nutmeg
  • 1⁄4 cup natural peanut butter
  • 1⁄4 cup mashed, cooked sweet potato
  • 1⁄4 cup honey
  • 1 teaspoon fresh orange zest
  • 1⁄4 cup raisins
Instructions
  1. Preheat oven to 325°. Line a 9x5-inch loaf pan with parchment paper and spray with cooking spray. In a large bowl, whisk together oats, cinnamon, salt, ginger, and nutmeg.
  2. In a medium bowl, whisk together peanut butter, sweet potato, honey, and orange zest. Stir wet ingredients into dry ingredients. Fold in raisins until just combined.
  3. Spoon dough into prepared pan. Using wet hands, press dough into pan.
  4. Bake until bars are just set, 25 to 30 minutes. Let cool completely in pan. Remove from pan, and cut into 1-inch squares.
