Sweet Potato–Peanut Butter Bars
- 3⁄4 cup quick-cooking oats
- 1 teaspoon ground cinnamon
- 1⁄2 teaspoon fine sea salt
- 1⁄2 teaspoon ground ginger
- 1⁄4 teaspoon ground nutmeg
- 1⁄4 cup natural peanut butter
- 1⁄4 cup mashed, cooked sweet potato
- 1⁄4 cup honey
- 1 teaspoon fresh orange zest
- 1⁄4 cup raisins
- Preheat oven to 325°. Line a 9x5-inch loaf pan with parchment paper and spray with cooking spray. In a large bowl, whisk together oats, cinnamon, salt, ginger, and nutmeg.
- In a medium bowl, whisk together peanut butter, sweet potato, honey, and orange zest. Stir wet ingredients into dry ingredients. Fold in raisins until just combined.
- Spoon dough into prepared pan. Using wet hands, press dough into pan.
- Bake until bars are just set, 25 to 30 minutes. Let cool completely in pan. Remove from pan, and cut into 1-inch squares.
